A tasty mix of cauliflower, peppers and cashews nuts is stir-fry with spices to give a delicious dish in minutes.

Ingredients:
1 cauliflower
6 TBSP plain yogurt
juice of 1 lime
2 garlic gloves, peeled and crushed
2 inch piece gingerroot, peeled and crushed
2 TBSP curry paste (your choice of mild or hot)
1 TBSP paprika
salt
5 TBSP vegetable oil
1 onion peeled and quartered
1 red bell pepper, seeded and cut into 1/2 inch pieces
1 green pepper, seeded and cut into 1/2 inch pieces
1/2 cup unsalted cashews
4 TBSP water
chives or scallion to garnish

1. Cut the cauliflower into 1/2 inch strips and place in a bowl, add the yogurt, lime juice, garlic, ginger, curry paste, and paprika. Season well and mix the ingredients together. set aside. (I like to marinate the cauliflower in this mix for a few time)

2. Heat the oil in a large skillet, add the onion, peppers and cashew and stir fry over medium heat for 2 minutes, remove from pan, add the cauliflower and stir fry until cooked, around 10 minutes.

3. Add the water and mix well, then return the vegetables to the skillet. Reduce the heat and cook for 5 min. Serve and sprinkle with scallions or chives
