This soup is very tasty, easy to make, and nutritious. I like to make a double batch and keep some in the freezer to use later.

Ingredients:
1 Onion sliced
2 lemongrass sticks (Or lemongrass essential oil)
3 Large carrots cut in thick pieces
1 Sweet potato cut in thick pieces
1 Large celery stick sliced
2 handful cilantro
2 large garlic gloves
1 Can coconut milk (unsweetened)
2 Cups vegetable stock
2 TBSP Soy sauce
1 TSP salt
1 Lime
sesame seed to garnish

In a soup pot add the onion, garlic, sweet potato, carrots, lemmongrass, and celery:

Add the vegetable stock, salt and cook until carrots are soft. Stir in cilantro. Turn the heat off:

Add coconut milk, and lime juice:

Use an immersion blender or regular blender until smooth:

Serve and garnish with sesame seeds. Enjoy!
