I love this recipe as a side dish. The Quinoa with this combination tastes rice like.

Ingredients:
1 cup washed quinoa
1 3/4 water
1 cup peanuts
3/4 cup coconut flakes
1 lime
coconut oil
(variation: add kale or broccoli at the end if you want)

1. Heat 1 TBSP coconut oil over medium heat, add quinoa until the water from washing the Quinoa evaporates. 1 min.

2. Stir 1 TSP salt, add the 1 & 3/4 cups of water, Bring to boil and reduce the heat to as low as possible, cover and cook for 15 minutes, remove from heat and let sit for 5 minutes.

3. while the quinoa is cooking, roast the peanuts and coconut, I like to cut the peanuts into small bits before roasting.

4. When the quinoa is ready mix in the peanuts, coconut, juice of 1 lime, 1 TBSP coconut oil, and 1/2 TSP salt.
