This is a recipe I make every week & I have in my fridge. I make it as a heathy snack or even lunch or dinner replacement when I don’t feel like cooking.
Ingredients:
1 cup mung beans
1/4 rice
1 cup spinach
1 green Chile
1 1/2 cup water
1 TSP salt

soak Ming beans and rice on water over night

blend all the ingredients and use a soup spoon to start the pancake batch

heat each side of the pancake a couple of minutes

serve it by itself or any sauce. Our favorite topping is jam
