This is one of my favorite soups. Its very simple yet delicious. Serves 4-6
Ingredients:
  • 2 TBSP butter, ghee, or coconut oil.
  • 1 large yellow onion (chopped).
  • 3 gloves of garlic (chopped).
  • 1/2 TSP red pepper flakes.
  • 5 1/2 cups vegetable broth or water.
  • 1 1/2 cups rinsed green lentils.
  • 3 TBSP butter.
  • 1 TBSP curry powder.
  • 1/2 Cup coconut milk.
  • 2 1/4 TSP salt
  • Chives to garnish.

In a soup pot combine 2 TBSP of butter, the onion, garlic, and red pepper flakes over medium heat, stirring until the onions are soft (2 min).

Add the vegetable stock or water, lentils and simmer, covered until the lentils are tender. (40 min)

In the meantime, warm 3 TBSP of butter in a small saucepan over medium heat until brown, add the curry powder and saute until fragrant (less than a minute)

When the lentils are finished cooking, remove from heat, add the coconut milk, stir half the spiced butter, and 2 1/4 TSP salt (if your vegetable broth is NOT SALTED other wise use less salt), and puree with an immersion blender or regular blender. Its up to you to have it chunky or smooth. I like it Smooth!
Serve drizzled with remaining spice butter and sprinkle chives! Enjoy!
