I have been wondering about this because the wild bird seed blocks are cheaper and more yummy looking than the ones meant for chickens.

It looks delicious, but is unlikely to be a complete ration that hits all the numbers. An occasional treat.

does the packaging list the ingredients? I think I can see peanuts, mealworms, various grains and seeds, but can't think what the glossy glue that holds it together might be.

Gelatin is the binder. Gelatin is a protein although the amino acid from gelatin alone sucks. I use it in purified and semi-purified fish diets on occasion and must balance it against other purified protein sources and a dash of crystalline amino acids to get a suitable amino acid profile in the diet overall.
