Okay. So I was wondering if I crossed my BCM rooster with my (blue layer) EE hen, will the resulting pullets be olive eggers? Chick in question is below. Gender guesses welcome as well. 2-3 weeks old. (It does have a beard)

Yup, your babies will be olive eggers. How olive depends entirely on how dark the chocolate coloring genes are that dad passes on. That baby is looking roosterish to me due to comb development and pinkness, but it's a guess at this point. It's too early to tell, and I could totally be wrong. I'd still be hoping for a hen if that was my chick. Cute chickens, very nice photos of them too.
