I'm trying to understand male/female patterns, I see it mentioned here a lot. I have an almost 3 week old Olive Egger from Cackle so that means a Cream Legbar over a Welsummer, I assume. What I'm trying to understand is if males would be getting black feathers on their chest with their first feathers, or do they not come in till later. May be a stupid question, but I've only ever had POL pullets, never chicks so this is new to me.

So, for example:

If this chick were a male, would those feathers coming in be black? Can this chick be sexed by those feathers or would they turn black when it's older & saddles & hackles started coming in? Not necessarily trying to sex this chick, just trying to understand. :)

Yes. Black means male.
