How Long Will A Hen Lay Eggs?

Ive have read somewhere on the internet that hens will only lay good for about the first 3 years of their life. After that, egg production goes downhill from there. Is this pretty accurate? Whats your experiences? And, once egg production does decrease then do most people make "chicken soup" of their hens?
 
In general by the age of 3 egg laying can be slowed down quite a bit. However, this can also vary by the breed. Some of the laying breeds get burned out a lot quicker than others.
