What qualities would EExBrahma chicks have? Would the hens lay colored eggs or brown eggs because of the brown egg gene? The roo is the Brahma, the hens are EE.
What about the EExBrahma offspring? Would they still lay colored eggs if sired by a true Ameraucana? What about an EE?

Most of what you're asking depends what color egg the EE lays and whether she is homozygous for blue egg gene.

That is what I'm saying. It depends on if your EEs have one or two copies of blue. Any offspring that receive a blue and a brown would lay a shade of green and any that receive white and brown would lay brown. It's impossible to predict unless you know your EEs background or genotype.

If you don’t want to leave anything to chance invest in a quality and pure Ameraucana rooster and cross him over brown egg layers for olive Eggers.

It would take a darker Brown (and usually a couple crossings) to end up with an olive egg.

I was under the impression that olive Eggers referred to any chicken that lays green eggs. I guess if it lays a green egg but it isn’t olive it’s an Easter Egger.

That is my understanding since EEs can lay green, and it isn't until the bird lays olive color that it gets to be called an olive egger (or maybe an olive egger project bird or F1 et al olive egger) but regardless the brown for those birds comes from Marans or Welsummer or other dark layer, as a medium brown would not be enough coating to produce olive.
