True pheasants are any of the subspecies and domestically bred colors of Common/Ringneck pheasant? And,
about How much feed does a True pheasant need a day?

In one of my two old, outdated pheasant books it talks about hedges of Privet. Now, Privet is toxic to chickens, so it must be toxic to pheasants too, right?

Yes, you're right, introduced from Europe, Asia, and northern Africa.

Crepe Myrtle, they are a tree, I don't have any in my pens because they grow big fast.
Lantana grows wild down here. Nurserys usually have them, Lowe's, Home Depot, etc ...it's a flowering shrub. Many different color varieties available.
