I'll go ahead, & list what my birds get in feed, supplements, & occasional treats.

(Standard Coop/Project Coop) This is the coop with the two color changing hens.

Feed: Nutrena Naturewise 20% All Flock Pellets. Occasionally I'll mix some 22% Nutrena Naturewise Meat Bird feed in with their regular feed for a protein boost for molting, or growing birds, or for butcher birds.

Occasional treats include: Shrimp Shells, fruits, scratch, a flock block, lawn clippings, weeds from the garden, harvest goods from the garden, & bugs.

Supplements:

Oyster Shells in separate dish for calcium.

Nutridrench

Kick'n Chicken, Healthy Coat

Rooster Booster, Poultry Cell

Where would one go and get their soil and water tested?
How do you go about ruling out pesticides etc...?

In the US your county extension office should be able to help you there.

That is SO EXPENSIVE! I bet it cost them pennies to test.
