I've been baking since dirt was created. I used to make ~3000 holiday cookies for ChildHelp where I used to live. I've made bread for decades. The biggest tip on that is don't consider the amount of flour in a recipe to be accurate. It depends on the humidity. That can change the needed amount of flour by up to a cup. Cinnamon buns are the spare tire around my center . . .

adding ingredients by weight helps with the amounts to use...but even so the type of flour also makes a difference. Some flour will hydrate more or less than others. Thanks for the tip!

I too use the amount of flour as a guide.
