Dutch Baby
Makes 8 squares
Ingredients:
2 Tbsp Butter, for the pan
2 cups flour
1/2 tsp salt
2 Tbsp sugar
3 cups milk
4 eggs
Powdered sugar, lemon juice, fruit, for topping (optional)
Directions:
1. Preheat oven to 375 degrees. Place the butter in a 9 by 13 inch pan, then place the pan in the oven (take it out when the butter is melted)
2. While the butter is melting, mix the flour, salt, and sugar together in a medium mixing bowl.
3. Add the milk and eggs, mix well. (the more mixed, the better)
4. Pour the mixture into the pan, and bake for 30-35 minutes. It should be very puffy and brown in parts.
5. Top with powdered sugar, fruit, and/or lemon juice.
6. The most important step... Enjoy!
Preheat oven to 375 degrees (Fahrenheit)
Place the two tablespoons of butter in the pan, then put the pan into the preheating oven (or if it’s already pre-heated, you can put it in at 375 as well, it will melt quicker though)
Take the butter out when it is melted. Don’t let it burn! (Not that I’ve ever done that before...) just keep an eye on it.
While the oven is pre-heating/butter melting, make the batter.
First put the 2 cups flour, 1 teaspoon salt, and 2 tablespoons of sugar in a medium/large mixing bowl.
Mix that together with a whisk.
This step is optional, but I usually make a well in the center, using my fingers. (If you don’t want to get your fingers floury, you can use the back of a measuring cup)
Then you add the 3 cups milk, and 4 eggs.
(Note, the recipe is pretty forgiving when it comes to egg sizes, as you can see here, I use both bantam and large eggs)
Whisk really well. You don’t want their to be egg white/yolks left in the separated otherwise parts of the finished product may taste like scrambled egg. (it’s ok if there’s a few flour lumps though)
Next (hopefully you didn’t forget about!)
Pour the batter into the pan. It works best if the pan is hot. By now the butter should be fully melted, and it’s ok if you already took the pan out of the oven earlier.
Bake for 30-40 minutes, it varies by oven.
