Do I have a way to know which gene is dominant or recessive in each one of my chicks?

Well, they’re most likely either dominant white or recessive white, and you’ll be able to tell which by looking at the chicks’ colors.
Dominant white x not white = mostly white with a few black spots and possibly some red leakage
Recessive white x not white = color varies, not solid/mostly white

However, if you cross a recessive white to a known recessive white carrier (has one copy of the gene but doesn’t show it/isn’t white) then you could get some solid whites. Recessive white carriers can be produced by crossing recessive white to any other color.
