I have not seen any hatching eggs advertised in years. With import/export laws being so stringent it is highly unlikely that you will find any available. If you are serious, I recommend trying to locate a source in the Yucatán Peninsula, Mexico, Belize or Guatemala.

It would be almost impossible to keep Ocellated turkeys in Canada since they are a tropical bird. You would also need to get an import permit to be allowed to bring them into Canada. Even if you could keep them alive, successful reproduction is unlikely without an extremely large temperature...
