Great set up ! very cool and easy to get at . I live in NJ too , i wouldnt worry too much about the heat either. It is the ventilation thats important . The chickens never mind the cold its the heat that would kill them .

I never refrigerate them , they are always on my counter . They dont last long longest is about 3 days . never wash them until i eat them either .
