You could try transitioning them to an all flock and supplement with free choice oyster shell. That offers the higher protein content that may be causing the production reduction.
I am no expert but assuming it is fertilized it would hatch. The only concern would be if the egg had multiple yolks it could cause a problem as multiples do not develop as well for whatever reason. If you can confirm the presence of a single yolk versus 2 yolks it should be just fine.

We see that from time to time with our ladies as well. I wouldn’t worry about it unless it starts happening consistently. A lot can happen during the time the egg is developing so if that is the only blip over the course of a year I would think you are doing just fine.
