Making a vegetable soup for the week today. I like to take it to work for lunch and add a can of sardines for protein. Lots of good hardy winter veggies…rutabaga, turnip, cabbage, onion, garlic, kale & winter squash I’m thinking!
The first time I grew celery, it took almost a month to sprout. I nearly gave up. But then I got 4 good seedlings from the 6 I planted, and had cut & come again celery all summer! Now I know to wait patiently, celery can take forever to sprout.

Now that it’s been getting cooler, I’ve been making 2-3 pots of various veggie soups, and a bunch of salads and baked squash halves. It’s super easy meal prep, and I have breakfasts & lunches ready to go for the week! I love 1/2 squash for breakfast with some yogurt & berries on the side. 😊
I sautéed potatoes, onions, kale & sausage in a skillet with chicken broth as our main dish.
Made a spinach salad with roasted beets, golden raisins, nuts, and goat cheese with an orange & olive oil dressing.
Was a lovely and hearty meal!
I made a zucchini one-dish meal yesterday. Sautéed onion, garlic scape, cabbage, kale, and zucchini, combined with browned ground beef. Added some fresh herbs right before turning it off. All grown by me except the local farm beef.
I cheated. 😂 I sautéed (my) garlic scapes with (farmers market) zucchini, added (my) Swiss chard and some spices, along with homemade chicken broth. Topped with (grocery store) potatoes. Was dinner yesterday, and leftovers were breakfast today. I can’t wait til I start getting zucchini!
